My kids don’t like this much, but I LOVE it, so I’m sharing a Mommy recipe today! I make this for lunch all the time, it’s quick and easy and semi-healthy as long as you don’t add too much of the cheese ;o) My recipe is kind of “loose” as I tend to just throw it together.

Ingredients:

  • Handful of Cherry Tomatoes, sliced in half
  • 2-3 oz. mozzarella-prosciutto cheese roll, sliced
  • Fresh Basil, shredded
  • 2 T Balsamic Vinaigrette

Directions: Mix all ingredients together and enjoy!

  1. Yu-Hum!! SO delish! I love this salad too……only so do my kids! My girls developed a taste for this via the kabab! One cube of mozzarella, a grape or cherry tomato and a basil leaf dipped in the vinegar. I think the novelty of eating if off of a stick (we used 4 inch skewers) won them over! I hope your kids learn to like it as much as you do!
