This is one of my fall back meals, its super easy to fix, and can be ready in about 10 minutes!
Ingredients:
- 6 chicken thighs and/or 1lb of Sirloin Steak (cut in thin slices)
- 1 green bell pepper sliced
- 1 red bell pepper sliced
- 1/2 medium onion sliced
- 1/4 cup olive oil
- 1/4 cup canola oil
- 1 Tbsp oregano
- 1 Tbsp basil
- 1 Tbsp parsley
- 1 tsp garlic salt
- 1 tsp onion salt
- Tortillas
- Optional: guacamole, sour cream, shredded lettuce, diced tomatoes
Directions:
Step 1: Turn oven to broil.
Step 2: Slice thinly all meat and veggies and spread out onto a cookie sheet.
Step 3: Pour all remaining oils and spices on top of the meat and mix well with hands. (If I’m doing meat and chicken, I put them on separate cookie sheets. Also, you can sauté the veggies in a skillet if you prefer to keep them separate.)
Step 4: Broil fajitas on hi for about 5-6 minutes, flip meat and broil another 5-6 minutes until done.
Serve on tortillas with guacamole, sour cream, shredded lettuce, diced tomatoes, rice/beans, whatever you like!
Note: This is a great freezer meal, just slice the raw meat and put in a Gallon Ziploc baggie along with the oils and spices. In a separate bag put the sliced veggies. Freeze the bags and then thaw overnight when you’re ready and prepare as directed above!
