Coconut Chicken
I found a great recipe for Coconut Chicken that I wanted to share with everyone today. Its really easy and yummy and was a hit with everyone. I served it with sweet potatoes and corn on the cob, but it goes with just about anything. Ready? Ingredients: 4-6 chicken thighs 1/3 cup dry plain breadcrumbs 1/3 cup flaked coconut 1/4 cup butter, melted (can substitute olive oil) Salt & Pepper (to taste) Cooking Spray Optional: tin foil Directions: STEP 1: Season chicken with salt & pepper to taste. STEP 2: In plate mix breadcrumbs and coconut together, and roll chicken thighs in breadcrumb mixture 1 at a time to coat well. STEP 3: Place coated chicken in lightly sprayed baking dish and drizzle lightly with butter or olive oil. STEP 4: Bake at 350 for 45-55 minutes until chicken is done. Scavenger Hunt Find It!
So about 2 seconds into my beloved “school’s out for summer” much needed break, the kids started getting bored. Thankfully I stumbled upon this post from Muffin Tin Mom and got right to work! Click here to download “Find It!” I handed each child a clipboard with the Find It worksheet clipped to it and instructed them to find each item and draw a picture of it in the box provided. I was amazed at how quickly they all jumped at the chance to do an activity! Our Garden: June Update
I know it's already July, but I'm just now getting around to sharing these photos from June! I showed some of our seedling plants in my first garden post this year, and here’s where they are now! They’ve been successfully transplanted and seem to be thriving despite the unusually cold start they had followed by the lovely harsh wind that’s been ripping through our state. Our first bed has onions, lettuce, carrots, radishes, broccoli, cauliflower, snap peas, peppers, tomatoes, basil and parsley. Our second bed contains strawberries, watermelon, and cantaloupe. The third bed isn’t worth showing, its mostly corn, cucumbers and zucchini but they’re still babies. Homemade Strawberry Jam
We had our Keepers Meeting tonight and we made our very own homemade strawberry jam! Yum! It was so easy, I thought I’d share the recipe with you all. This is NOT a canning recipe, I’ll cover more of that in a later post, but for this we put the jam in jars and then into the refrigerator. They should be good for about a month. So don’t be afraid, YOU CAN DO IT! And the taste is WORTH it! Ingredients: 4 pints of strawberries (cut off stems, wash & chop) 7 cups sugar 1 pkg fruit pectin (I used Ball Brand) Equipment: Potato masher Large sauce pan Glass Jars, seals and lids (Recipe makes about 8 cups, or 5 pint sized jars) Metal Spoon Measuring Cup STEP 1: Put 5 cups of strawberries into large sauce pan and using potato masher, mash strawberries until pulpy (is that a word?). We left some chunks just ‘cuz we like it! STEP 1.5: Make sure to sample the strawberries for freshness!
