Homemade Salsa Recipe

I don’t know about you, but summer always leaves me craving fresh snacks! And so for today, I have a very simple Pico de Gallo recipe to share with you! It’s crisp, fresh, and muy bueno!   I know you all probably have a favorite recipe for pico de gallo, but I thought I’d share mine as well. I like to keep it simple, so the less ingredients I have to deal with the better! Let’s get started chopping shall we?   Ingredients: 1-2 tomatoes, diced 1 red or white onion, diced (I prefer red, but only had white today!) 2 sprigs fresh cilantro, finely chopped 1/8 teaspoon salt 1/8 teaspoon pepper 1/2 teaspoon garlic powder Splash of lime juice (Normally I would use half a lime and squeeze it in)     Directions: Chop everything up and mix it in a bowl!   Serve! Cheesy Buttermilk Biscuit Recipe

Okay, so how many of you were curious about those delicious looking little biscuits behind my Ham and White Bean Soup recipe last week?   Oh my, they’re so yummy! And if any of you have a Jim-n-Nicks BBQ around you, you’ll recognize them. I’ll tell ya what…these are knock-offs, but they taste the same and you can make them yourself! Ready? Ingredients: 1 1/2 cups flour 3/4 cup sugar 1 1/2 teaspoon baking powder 4 tablespoon butter, melted 3/4 cup buttermilk (Found in the dairy isle by the milk. You can substitute whole milk, but why?)  1 egg, beaten well 1/4 teaspoon vanilla 1 cup shredded cheddar cheese Directions: Preheat oven to 400 degrees Fahrenheit. Add the dry ingredients (flour, sugar, and baking powder) in a bowl and then cut in the butter with a fork until well mixed. Add in the finely shredded cheese and mix well. Homemade Refried Beans Recipe

Hello fabulous readers! I wanted to share a recipe that has eluded me for years now…simple homemade refried beans. Maybe it’s because I’m Italian, and there’s no pasta involved... Anyway, I know you probably already have your own recipe for this, but for those of you like me who struggled to make them without the taste of cardboard coming to mind, please read on! These are really quite easy, and thanks to a couple of my good friends, I think I’ve finally mastered the illusive refried beans. Before I go on, I just want to let you know that I don’t actually re-fry them…they’re good as is, and I didn’t feel the need to take something yummy and…well…fry it. So let’s get on with it shall we?
