  1. Thanks for doing this! It has helped me stay organized with trying to balance homeschooling, my husband’s 12 hour shifts, and three little ones. I was going to give you one suggestion for an easy lunch meal: we do “spuds”. I will either bake potatoes or microwave them, then put out toppings: butter, sour cream, veggies, cheese, pepperoni, tomatoes, salsa, guacamole… It is quick, easy, filling, and you can get many food groups!

  2. A super easy lunch meal is a cheesy quesadilla that my kids request a lot:

    1 flour tortilla
    handful of shredded cheese

On a microwave safe plate put tortilla. Put cheese on one half and fold over other half. Microwave for 45 seconds or until cheese melts.

I do two on one plate since they are folded in half. 🙂

One of my girls doesn’t like jelly so we do peanut butter and marshmallow fluff for her. Play date kids think I’m the coolest mom ever when I surprise them with that. It’s actually healthier than jelly if that makes sense.
