Hi friends! I have a really easy lunch recipe to share with you today. I’ll be showing you how to make this delicious Avocado Shrimp Salad that is super easy to make, and is a light, refreshing lunch idea for those warmer days!

In the summer I really don’t like having to use the oven, and honestly I prefer to eat fresh clean foods anyway. This simple Avocado Shrimp Salad is the perfect solution! And if you make the Cilantro Lime Shrimp (recipe below) you can use the leftovers to create this salad in a snap!

Avocado Shrimp Salad Ingredients:

  • Cilantro Lime Shrimp
  • 1 Avocado diced
  • Pico de Gallo
  • 1 Tbsp Fresh chopped cilantro
  • 1/2 Lime juice
  • Mix well and serve!

 

Cilantro Lime Shrimp

  • 1 lb. peeled/deveined pre-cooked shrimp, thawed
  • Drizzle with olive oil
  • 1 clove minced garlic
  • 1 Tbsp. chopped cilantro
  • A squeeze fresh lime juice
  • Marinate in plastic bag for about 1-2 hours in refrigerator.

 

Pico de Gallo

  • 1/4 c diced onion
  • 1 medium tomato, diced
  • 1 seeded/diced jalapeño
  • A squeeze fresh lime juice
  • Mix well and serve!
